Much of thisadvice is based on incomplete experimentation, and sometimes it doesnt holdup when better work is done. Lately, scientists have focused on a newvillain in our blood, homocysteine, and are proposing that we keep it athealthy levels by passing up animal protein and getting more of the Bvitamins. Chastened, perhaps, by the recent finding that a high-fiber diet does not infact protect against colon cancer, researchers are less emphatic than theymight once have been in calling for dietary changes to keep homocysteinedown. What they do know is that high levels of this amino acid, a product inthe bodys breakdown of protein, are associated with arterial disease. Stillto be proven is that eating less animal protein or more vitamin B6, B12, orfolate (another B vitamin) will actually reduce our risk of cardiovasculardisease. While the jury is still out on that count, the evidence of the benefit offolate (also known as folic acid) in preventing birth defects is so strongthat for the past two years bread, pasta and cereals have been fortifiedwith it under a mandate from the US Food and Drug Administration. Inaddition, homocysteine has been linked to miscarriages, Alzheimers disease,strokes, and osteoporosis. All of this builds a strong case for eating foods rich in folate or vitaminB6: asparagus, broccoli, spinach, cabbage, orange juice, bananas, avocados,wheat germ, lentils, oatmeal, chicken, and egg yolks. The last two items onthe list show that dispensing with animal proteins altogether is tricky,especially since vitamin B12 is found only in liver and other meats, fish,eggs, and milk. Vitamin supplements are an alternative. Not to be forgotten is the meditation factor. A study at Ohio StateUniversity shows that stress can raise homocysteine levels. The message issimple: yoga and yolks.
